An Italian Aperitivo Masterclass at the glamorous Brunello Bar.

On a beautiful autumnal evening, I stepped into the elegant Brunello bar at the five star Baglioni Hotel London in Kensington. Just a stone’s throw from the Royal Albert Hall and across from Hyde Park. It was a glorious evening to attend one of their Aperitivo Masterclasses with some equally enthusiastic companions.

In this Masterclass we would be given the opportunity to create some classic cocktails, whilst sampling some of the finest Italian delicacies from Executive Chef Alberto Rossetti and Resident Chef Raffaele Lauriola. To say I was excited would be an understatement.

Upon arriving we received a delicious welcome drink, a glass of beautiful prosecco and were given a briefing on the evening by the Head Barman.

First up, we made the trendy aperol spritz; the keys to the perfect spritz are that it is not too orange, that there are two ounces of prosecco and one and a quarter ounces of aperol, with a splash of soda water and garnished with orange. It was delicious and such great fun to be on the other side of the bar creating drinks for my companions.


We made three further cocktails which were gin, bourbon and whiskey based. All of which were interesting and moreish. My very favourite though was the gin based cocktail with a surprising ingredient, essence of porcini mushrooms, which added a nutty and woodsy flavour which I really enjoyed and look forward to having again in future.

I’ve been told that unlike in the UK, in Italy it is rare to go for drinks without food. Shortly after our first cocktail was concocted, the food came out and it was beautifully presented. There was lots of bruschetta; with fresh tomatoes, olive oil and oregano, with tasty prosciutto and also with smoked salmon, all of which were devoured in an instant.


From Italy’s Marche region, we sampled a delicacy of stuffed fried olives with a meat accompaniment or “olive all’ascolana”, if you like olives and meat, you will simply love these. To follow, were some gorgeous arancini and the star dish, the exquisite and creamy saffron risotto.

All in all it was a terrific evening in a glamorous setting. I was transported into an authentic Italian experience with excellent food and drink, with passionate hotel staff who really knew what they were talking about.

I cannot wait to return to The Baglioni with friends and colleagues to experience even more of their menu at the Brunello Bar and Restaurant.
